Carrot Purée

A new Fall favorite for only 50 Calories!

 Aprox. Calories: 50 Calories

 Tools: Cheese Grater, Blender, Small Sauce Pan, Colander

 Ingredients: ½ Cup Carrots, 1 Orange, 1 tsp. grated Ginger Root


Step 1) Boil carrots for 10 -15 minutes or until carrots are soft enough to mash or purée.

Step 2) Strain carrots and place into blender.

Step 3) Cut orange in half and squeeze orange juice into blender.

Step 4) Add in the 1 tsp. freshly grated ginger root.

Step 5) Blend!

Step 6) Once carrots are blended, plate as a side dish or as a “bed” for your main course.

So skip the mashed potatoes and give this mashed vegetable a try! Let’s keep “eating like a rabbit” together!
