Chicken, Peanut Butter, Peanuts, Olive Oil, Lettuce, Lemon, Clementine & Pineapple Juice.

Music to Listen to While Preparing:

Island tunes….duh 🙂 Jimmy B, Bob Marley, Kenny Chesney, whatever you would listen to if you were on a boat!


*Cube chicken breast and place in a medium heat-olive oil lined frying pan.

*Continue to let chicken cook and add a bit of pineapple juice and a small handful of peanuts. (I tend to use the ones that you toss on ice cream)

*Let juices and peanuts cook with the chicken until chicken is thoroughly done.

*Spoon in 1 tsp. of peanut butter into the hot skillet and mix together with the chicken, remaining juices, and peanuts.

*Shred crisp and chilled lettuce and place into a bowl.

*Segment a clementine and place on top of the lettuce.

*Adorn the warmed chicken and peanut sauce over the bowl of salad and clementine.

*Squeeze a fresh lemon over the Island inspired salad and dig in!

(Not going to lie, I like things spicy…and so does your metabolism. Try adding hot sauce or crushed red pepper to your chicken and peanut sauce for an extra “zing!”)

Crush it like the Cruzan Rum!
